Celiac disease a genetic autoimmune disorder that is triggered by the ingestion of gluten – a protein found in wheat, barley and rye. When an individual with celiac disease eats food containing gluten, it sets off a reaction that causes inflammation and damage to the intestines. In support of celiac disease, Minsky’s team members have completed gluten-free training through the GREAT Kitchens program – an educational initiative created and run by Beyond Celiac. Managers and staff have been instructed on how to read ingredient labels, avoid cross contamination with foods containing gluten and answer your questions about Minsky’s gluten-free options.
