Minsky's History

The Minsky’s Pizza story actually begins in Ames, Iowa, just across the street from Iowa State University. Founder Gregg Johnson had previously started Godfather’s Pizza in Omaha, Nebraska. He sold that successful business to a business partner and set out to deliver a better pizza experience using only the highest-quality ingredients. He called the new business “Minsky’s Pizza” – a name choice that was what Gregg called a “two-beer marketing idea.”

The little pizza shop in Iowa did well, and the college town customers loved the pizza. It was enough proof to Gregg that his dedication to quality ingredients set Minsky’s apart in an industry often more focused on new ways to cut corners. It was time to grow from a college town to a bigger city.

Moving To Kansas City

Gregg set his eye on Kansas City, a place he enjoyed visiting frequently. With professional sports teams, the Plaza shopping district, and the city’s welcoming Midwest hospitality, KC just felt right. In 1976, Gregg decided to make the move, so he sold the Iowa pizza shop and brought his vision for what he called gourmet pizza to Kansas City. He found the perfect spot to open KC’s first Minsky’s location – 5105 Main Street, just a few blocks south of the Country Club Plaza.

In less than a year, Minsky’s Pizza began expanding throughout the Kansas City metro, fueled by growing demand and a reputation for delicious pizza. Minsky’s was becoming known for more than just quality ingredients, gaining a following for taking an inventive approach to pizza – blending new flavors and elevating classic favorites into gourmet masterpieces.

Next door to Minsky’s flagship South Plaza location was a popular local BBQ joint – Jake Edward’s BBQ. The owner, Jake, had plenty of tender BBQ chicken, and he would, from time to time, suggest Gregg might want to try it on a pizza. One of Gregg’s cooks decided to test it out – and to Gregg’s surprise, it really worked. The flavors blended well together, so well, in fact, that Minsky’s decided to make the Barbecue Chicken Pizza an ongoing menu item – an item customers couldn’t get enough of. (And, yep, Minsky’s was serving up the Barbecue Chicken Pizza – a pizza that has become a classic – long before Wolfgang Puck brought his version to America.)

Another early and popular pizza creation from Minsky’s is the now crowd-favorite Cheeseburger Pizza, a bold twist on pizza that Gregg launched to compete with McDonald’s lunch business. It too was a hit and remains a popular choice on today’s Minsky’s menu.

Years later, Minsky’s partnered on a specialty pizza with Joe’s Kansas City Bar-B-Que. To say it was “a hit” would be an understatement. Brought back annually (often around Father’s Day), the pizza that brings together two of KC’s culinary icons is the most anticipated collab of the year. The Minsky’s & Joe’s KC BBQ gourmet pizza is not to be missed – a pizza piled high with Joe’s famous smoked meats, painted with Joe’s BBQ sauce, with a dusting of Joe’s signature fry seasoning on the crust.

Local Partnerships

In addition to local business collaborations, Minsky’s works extensively with local not-for-profit organizations. For years, Minsky’s has partnered with Operation Breakthrough to raise money in support of their mission to serve children and families in poverty. The relationship began when Minsky’s teamed up with Kansas City Chiefs tight end Travis Kelce on the famous “Kelceroni” pizza. The collaboration was a huge hit, raising over $130,000 for Operation Breakthrough.

Continuing the Operation Breakthrough and Chiefs connection, in 2024 Minsky’s introduced the “Tranquilo Crunch” – a winning collaboration with Kansas City Chiefs linebacker Drue Tranquill.

Minsky’s lends a hand to multiple local organizations, both big and small, with Slice of Donation events, a program that allows non-profits and schools to host their own night of dining at Minsky’s. A portion of sales that day benefits the organization when its supporters make a purchase at Minsky’s during the Slice of Donation event.

The restaurant also partners with other local businesses on projects beyond pizza, like Minsky’s Vodka – crafted especially for Minsky’s by local distillery, Union Horse Distilling Co.

Local and National Recognition

Over the years, Minsky’s has been named Kansas City’s Best Pizza hundreds of times by the readers of local publications such as the Kansas City Star, KC Magazine, The Pitch, Ingram’s Magazine, Johnson County Times, and more. The restaurant has even received national attention when the trade publication, Pizza Marketplace Magazine, ranked Minsky’s among the Top 30 Most Innovative Pizza Brands nationwide. In 2026, Pizza Marketplace noted,

“Celebrating 50 years in 2026, Minsky’s Pizza remains the ‘Home of Kansas City Style pizza.’ In 2025, the innovator raised $75,000 for Operation Breakthrough through its ‘Tranquilo’ pizza collaboration with Chiefs linebacker Drue Tranquill.”

Also in 2026, Pizza Marketplace featured Minsky’s CEO Gregg Johnson on their list of Top 25 Pizza Executives, writing,

“Gregg Johnson, founder of Minsky’s Pizza, has spent 50 years defining ‘Kansas City Style’ pizza through a relentless commitment to gourmet quality.”

While Minsky’s is honored by the recognition, the restaurant’s focus always remains the same – to provide every customer with top-quality pizza and the best customer service.

In 2026, Minsky’s celebrated its fiftieth year of serving up gourmet pizza in Kansas City. Over the decades, Minsky’s has defined what it means to serve up Kansas City-style pizza – fluffy, handmade dough with premium-sourced meats and veggies tucked under a generous layer of fresh Wisconsin Mozzarella cheese. Minsky’s continues to set a high standard for pizza in Kansas City.

Minsky’s is honored and thankful for the support of thousands of loyal customers – amazing people who have made Minsky’s a part of their own life stories through birthday celebrations, wedding receptions, graduation parties, family movie nights, and so much more. They’ve allowed us to do what we love to do – make great pizza! And now at 50 years and counting, we look forward to serving up the Best Pizza in Kansas City for many, many more generations to come!
