How has Minsky’s staff prepared to serve gluten-free food?
Minsky’s management team members have completed gluten-free training through the GREAT Kitchens program, an educational initiative created and run by the National Foundation for Celiac Awareness (NFCA). Managers and staff have been instructed on how to read ingredient labels, avoid cross-contact with gluten-containing foods, and answer your questions about Minsky’s gluten-free options. Minsky’s and NFCA remind customers that changes in staff and management are always a possibility, so customers are advised to ask questions and confirm that gluten-free protocols are in place when ordering a gluten-free meal. What is celiac disease?
Celiac disease is a genetic autoimmune disorder that is triggered by the ingestion of gluten – a protein found in wheat, barley and rye. When an individual with celiac disease eats a food that contains gluten, it sets off a reaction that causes inflammation and damage in the intestine. That damage can interfere with the absorption of nutrients and lead to numerous short-term and long-term health problems.
Celiac disease affects an estimated 1% of the population. Currently, the only treatment is a strict, lifelong gluten-free diet.
What is non-celiac gluten sensitivity?
Non-celiac gluten sensitivity (also known as “gluten sensitivity” or “gluten intolerance”) is a condition that is also triggered by the ingestion of gluten, but does not appear to cause the intestinal damage that is seen in celiac disease.
Non-celiac gluten sensitivity affects an estimated 6% of the population. Currently, the only treatment is a strict, lifelong gluten-free diet.
