Minsky’s Visits Escalon Tomato Farms

Citric acid is used by some processors to lower the tomatoes’ pH and help speed up their production time. With a noticeably bitter taste, citric acid is thought to naturally come from fruit, but you may be surprised to hear it comes from GMO black mold!

Citric acid production has become a highly prized industrial process. Several scientific studies discuss the competitive and secretive process of engineering Aspergillus niger – a black mold naturally occurring on fruits and vegetables. However, significant modification of Aspergillus niger has taken place over the past few decades to increase production of citric acid and decrease the production of unwanted byproducts. This process ultimately ends with countless generations of genetically modified mutant variants.
